Picked up the indirect plate for the egg today, so time to setup a long smoke. 3 pounds if country ribs with my standard rub should be a good first cook choice. Tasty and very forgiving.
Made a loaf of Irish Soda Bread to complete the day.
No finish pics, but the ribs were good. Getting the egg dialed in at 250 took a while, but I think I’ll be set for next time.
